Dear Target, I Love You.

My beloved Target is and always has been one of my favorite stores to shop in. There's no annoying sales women trying to spritz some stinky perfume on my wrist, no Lady Gaga or Justin Beiber music blaring from every corner of the store at a volume that will impair my hearing for the rest of the day, and I can always find really cute things at non-ridiculous prices. And there's even a Starbucks inside my Target. Hallelujah! I've been anxiously waiting for the winter arrival of the peppermint mocha. It comes and goes so quickly. :(

ANYways, here's some of my current Target favorites:

And a quick fall goodie for you- here's a recipe for Pumpkin Chocolate Chip Muffins. I made a batch last night and brought them in for everyone at work this morning. They didn't last long. :)

Ingredients:
4 eggs
2 cups sugar
1 can (15 ounces) solid-pack pumpkin
1-1/2 cups vegetable oil
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
2 cups (12 ounces) semisweet chocolate chips

In a large bowl, beat the eggs, sugar, pumpkin and oil until smooth. Combine the flour, baking soda, baking powder, cinnamon and salt; gradually add to pumpkin mixture and mix well. Fold in chocolate chips. Fill greased or paper-lined muffin cups three-fourths full.
Bake at 400° for 15-18 minutes or until a toothpick inserted near the center comes out clean. Cool in pan 10 minutes before removing to a wire rack. Yield: about 2 dozen muffins.
